Early Potatoes

First harvest of the world's favorite root spans May - July.
Early potatoes tend to be waxy, which makes for particularly delicious potato salad, and gloriously sturdy fries.
The flesh is less fluffy than later varieties, and holds up well when cooked.

potayto, potahto, let's call the whole thing off...






The most humble of vegetables is surprisingly nutritious, rich in vitamins and minerals to boot:
Vitamins B6 & C, Iron, Folic Acid, Potassium, Magnesium, Zinc, and Copper.
