Purple Majesty Potatoes
Scrub 6 potatoes under cool water. Cut into wedges, about 1/2 inch thick. On a heavy bottomed baking tray,
toss potatoes with 2 crushed garlic cloves, generous amount of olive oil, salt and pepper.
Arrange the wedges in rows, all facing the same way. This will make it easier to fit more
and to keep track of which ones have been flipped over later.
Bake at 500 for ten minutes. Broil for another ten and then turn potatoes over and
broil until edges are golden and crispy. Adjust seasoning to taste and serve.
